Creamy Pesto Zucchini Pasta

This was so delicious! Raw zucchini pasta with a creamy pesto.

  • 1 large zucchini, julienned
  • 1 large bunch of raw basil
  • 1 small clove of raw garlic
  • 2 large spoonfuls of Chobani 0% plain yogurt
  • 1 TBSP pine nuts, toasted
Julienne the zucchini into a bowl, place to the side. You can also steam or sauté the julienned zucchini if you do not want it raw. 

Toast the pine nuts on the stove for a minute or two. Watch closely, they can burn very easily!

Place the garlic and basil in your food processor or blender; blend until everything is pulverized. Mix in the Chobani.  Pour the pesto over the zucchini and top with a sprinkle of the pine nuts. 

Feel free to add a protein or more veggies and some parmesan as well. Enjoy!
