Lemon Black Pepper Chia Seed Dressing

It's no secret that I love chia seeds. These little black seeds are packed with protein, fiber, and good fats.  It's also no secret that I love Chobani yogurt. Like eat every day, almost every meal type of love.  Combining the two makes for the perfect union. 

Ingredients, adapted from RDelicious Kitchen
  • 1 cup nonfat, plain Chobani Greek yogurt
  • 1 TBSP apple cider vinegar
  • Juice from one lemon, plus more if wanted
  • 1 TSP minced lemon zest (or grated
  • 2 TBSP chia seeds
  • 1 TSP fresh cracked black pepper
  • Water
Add 1 TBSP lemon juice and the apple cider vinegar to the chia; let soak for 15 minutes. If the seeds absorb all the liquid too quickly, add an extra tablespoon of water. Why soak the seeds first? Chia seeds have the ability to absorb up to 12 times their weight in liquids. If the seeds go un-soaked, that will give you a very dry dressing, which no one will like.

Combine the yogurt, pepper, lemon juice, zest, and chia seeds all together.  Let sit in the fridge for at least 20 minutes before eating. If the dressing has become too tight, add water one tablespoon at a time until it reaches desired consistency. Enjoy!
