Soy Lime Chicken Skewers

What is better than meat on a stick? If you answered nothing, you are correct.  Chicken skewers are fun and versatile. You can combine all your favorite flavors for never ending kabob enjoyment!

  • 3 boneless, skinless chicken breast cutlets
  • Juice of one lime
  • 1 inch chunk of fresh ginger, skinned
  • 3 TBSP lite soy sauce or liquid aminos
  • 2 cloves garlic
  • Red onion
  • Petite peppers, varying colors
Prep the onion and the pepper by washing and chopping into large chunks; set aside.

Cut the chicken into medium large chunks; set aside.

Combine lime, ginger, garlic, and soy into a food processor and chop until smooth.  Place mixture into a bowl with chicken and let marinate for 30 minutes in the fridge. Soak 3 - 4 skewers in water while the chicken in marinading. Preheat oven to 350 or turn on your grill.

Assemble skewers; alternate between chicken, onion, and pepper until all ingredients are skewered.

Cook in the oven for 20 minutes or 3 - 5 minutes on the grill on each side. Enjoy!
