Chicken "Pasta" Detox

This meal is so delicious you will want it even when you don't have to detox.  It also serves up beautifully; serve at a dinner for a nice light meal!




  • 1 medium carrot
  • 1 medium zucchini
  • 3 thin slices of red onion
  • 2 TSP olive oil
  • 1 TBSP tahini
  • 1-2 cloves of garlic
  • 1 scallion
  • 1 Campari tomato (or a few baby tomatoes halved)
  • Juice from half a lemon
  • 1 TBSP apple cider vinegar
  • 2-3 ounces baked chicken, cut into small chunks or shredded
  • Hemp Seeds (optional)

Julienne the carrot and zucchini; add in the red onion and set aside.  

In a pan over low heat, heat the olive oil and minced garlic; add in the tahini, lemon juice, and apple cider vinegar. Once incorporated add in the chicken to warm.  After 2 -3 minutes add in the julienned veggies and onion, toss together and warm for 2 - 3 minutes again.  Take off the heat, add to your plate, and garnish with chopped tomato, sliced scallion, and hemp seeds.
