Middle Eastern Salad

3 large cucumber, peeled & halved. Scoop out seeds and slice
3 Roma tomatoes, seeds scooped and sliced (cherry tomatoes work as well) 
1 small red onion, thinly sliced
1 teaspoon dried oregano 
1/2 teaspoon dried thyme 
1/4 teaspoon chili flake 
Large pinch Pink Himalayan sea salt
4-5 turns of fresh cracked pepper
Large handful parsley, roughly chopped 
Small bunch mint, roughly chopped 
1 garlic clove, minced (you can omit if you don't like raw garlic)
Juice of one lemon 
1 tablespoon EVOO (add more to taste)

Combine all ingredients and let sit in the fridge for at least one hour. Enjoy!

To make this more into a meal, I like to eat with chickpeas or hummus
