Perfect Single Serving 'Apple Pie a la Mode' with KIND Healthy Grains Clusters!

I love trying new foods and learning about companies doing fabulous things. When Kind Snacks contacted me for a collaboration I was ecstatic. Not only do they make one of my most favorite snack bars (Dark Chocolate Cherry I'm looking at you!) but they make their products with wholesome ingredients and are constantly giving back to the community in both big and small kind ways. 

Kind Snacks sent me an amazing array of granola with awesome ingredients you can see & pronounce® and I have been been enjoying them over my Greek yogurt and in my almond milk. I decided to treat myself to something a little extra delicious this weekend for Pi Day and make a healthy twist on Apple Pie A La Mode.

Wash your apple. Carefully core your apple and cut out a large whole, saving the apple chunks removed. Be careful not to cut all the way through! After you have hollowed your apple, spread lemon juice throughout to keep from turning brown.

Take the pieces from inside the apple and cut into chunks (make sure there are no seeds). Toss the apple with the cinnamon, nutmeg, honey, peanut butter, and granola. Carefully pop the mixture back into the hollowed apple and place in the oven for approximately 20 minutes.

Take the apple out of the oven when you can smell the deliciousness (smells so good baking!) and plate. Pop the banana, vanilla, and almond milk into your blender and blend until smooth. Scoop out the 'nice cream' and plate next to your apple. Sprinkle with a little more cinnamon and Kind granola and enjoy!
